APRICOT CHICKEN
You will need the following:
2L bottle of Apricot Juice...mine was 25% juice....Cheaper than Apricot Nectar and you get more cooking liquor to soak in the rice
1 pkt French Onion Soup Mix
1.5 kg Chicken Breast OR Chicken pieces....this is the first time I have used Chicken breasts...I left them in a bit long, and found some cubes to be a bit dry
4 or 5 brown onions...sliced or diced
Now on the stove, add the Apricot Juice to a pot...and reduce to half the quantity.
Stir in the packet of French Onion Soup mix
Dice the chicken (if using chicken pieces, I remove the skin)
Dice the onion
Spray a baking dish with cooking spray....
Place onion, chicken and Apricot mix into baking dish
Cook in medium oven for 3/4 hour or until chicken is tender, stirring occasionally to prevent chicken pieces on top from drying out...If you put a lid on to prevent drying, you will create more juice, undoing all that reducing.

Yup we love apricot chicken here and often in winter I add some curry powder for a bit of a kick and to warm up our tums - tastes delish :]
ReplyDeleteLove Apricot Chicken at our house, such an easy quick meal to make. I usually brown off my chicken and onion first, then add the soup mix, a tin of Nectar and a tin of halved apricots in juice. If I have time I let it bake in the oven, if not I just cook and reduce it in the Electric Frypan! YUMMO! Feel like some right now...

WendyB: Yep! a good way of using up a can of juice....I'm making those steamed rolls soon...so keep an eye out.
I love apricot chicken but my way is a bit different. I used chicken thighs, free range of course. Several onions, maybe 3 big ones. one take away food container of stewed apricots from the freezer (they weren't so wonderful on the tree this year and rather tastless unfortunately, but good stewed). 1 jar of apricot jam I made also. Was really yummy with a slightly sweet taste which I go for. And rice of course. Yummo!

Dayla: I usually use chicken pieces or Marylands too....but I had breasts that needed to be used...You're so lucky to have an Apricot tree....My hubby loves Apricots, being his favourite fruit...although shop ones are nothing like they were when we were kids.......Love your recipe...thanks for sharing it on my blog.
