Hi there!

I’m slowly working towards some simplicity within the home, but hey! It’s a lot of hard work!

I love having a go at growing my own veges and always use herbs fresh from my garden. I try to plant from seed whenever I can and have learnt to save and share my own seed for the following year. I make Award Winning preserves and pickles; and my husband brews Award Winning boutique beers as well. I love to stockpile and try to limit quick trips to the shops. I dabble in bread making and enjoy making my own stocks too.

I enjoy feeding my family good hearty meals, nothing like those tiny restaurant stacks you have to look for on the plate. My husband maintains our vehicles and machinery and we both enjoy fabricating on a small scale mostly relying on metal & timber recyclers for any materials needed.


While I don’t always have time to reply to comments, I love reading them. I hope you enjoy your stay and I hope you learn something new because I love sharing what I learn, and I'm always looking for another new skill myself.

Chicken & Chorizo with Apricot Delight

Hi there to everyone.....Hope you all had a wonderful weekend and either kicked up your heels or achieved what you wanted to do..........There's heaps going on in the garden here, and I went to my Garden Course over the weekend, so I'll be posting about that sometime through the week as well.


Today I have two really yummy and really quick recipes for you....Chicken Chorizo and Apricot Delight slice. Oh! and at the end, I've shared with you a photo of something new in my garden this year...and that is ........
Purple Podded Peas! 
Yep! you heard correct! I'm always up for trying something new and I found the seeds on ebay. 


Here is a really quick recipe for the nights when you don't feel like doing much, OR want a great impression from the family. I can assure you they will lick their plate clean. (well, my boys did anyway...lol)


Chicken & Chorizo
Olive oil to shallow fry
Chicken Breasts - 1 to 1.5kg
Chorizo Sausages - 2
Chopped herbs
Hokkien Noodles -1 small pkt...........(see picture below)
Thickened cream - 2 to 3 tablespoons
  1. Cut required amount of chicken breast into strips, (I used 1.5 kg) then sprinkle about 2 tablespoons of cornflour over the chicken strips and mix well.
  2. Shallow fry the chicken strips in 3 batches (see step 3), putting each cooked batch aside for later. 
  3. With the last batch of chicken, fry off 2 sausages of Chorizo that you have sliced to about 3mm thick. There will be enough oil from the Chorizo to fry that batch of Chicken.
  4. Now chop up some mixed herbs from the garden and stir through the fried chicken.
  5. Cut the packet of Hokkien Noodles in half and stir through.
  6. Add half a cup of water to deglaze the pan....then add a few tablespoons of thickened cream to make a sauce and stir through. 
  7. Serve to the family.


Apricot Delight - My version for my husband. I've made this today as part of a care package I am sending my darling hubby. I know he will be stoked to have some home made goodies from home.

1 pkt of Marie Biscuits
600grams of dried apricots
2 cups of dessicated coconut
1 can of condensed milk
castor sugar to coat the squares

1.  In a whizzer, add the biscuits and whizz for about 20 seconds.
2.  Add the apricots to which you have cut in half (just to help the whizzer on its way) and whizz for a    further minute or until the apricots are finely chopped.
3.  Add the coconut to the whizzer and whiz until combined.

4.  Then pour the mix into a large bowl or a mixer and add the condensed milk.
5.  Mix all the ingredients until combined to a thick dough.



6.  Using a teaspoon, scoop mix and roll into balls OR spread into a lightly greased slice tray
7.  Cover with a piece of grease-proof or baking paper and flatten out well. (I'm lucky enough to have this sandwich press which I found in an op-shop for $2. (I use this all the time when I make the men's work lunches)


8.  Chill in the fridge for an hour or so, then remove from the fridge and invert onto the same piece of paper  you used earlier.
9.  With the blade of a long knife, cut into rows. Then cut each row into wedges.
10. Now roll each piece in a bowl of caster sugar to coat........


 Too Easy! and definitely too yummy!

This lot is for hubby! But I'm thinking I will send him the two largest containers.

Check out the one right up the top towards the right....
it hasn't grown up in all its purple glory yet. 



They really are interesting,
I can't recall if the peas inside will be purple or not
I guess I will just have to wait and see.

    That apricot slice looks fantastic, will definitely be giving it a go. What a great idea for the sandwich press, I have one that I can put to use for that.

  3. Hubby will be pleased with that supply of treats, I'll bet! Yum! I love apricots, but if I made that recipe I'm afraid restraint would be impossible and I'd eat them all day long.

  7. Hey, lucky I am sending most of that slice off to Hubby, because I couldn't help myself. It's just too darn yummy. I gave mum a container with some in it, to put in her fridge....It will be safer in there. DS16 will not be amused when he comes home from school to find it is 'all gone'.

    Apricot is Hubby's favourite fruit...he would much rather an apricot pie to an apple pie...but he is easily pleased when apples are a plenty too.

    You could also use any plain sweet biscuit that you would normally use for a biscuit base for a slice.

  8. Love your Apricot Delight recipe Narelle. I do one similar for the kids just with the apricot, coconut and condensed milk and roll in balls in coconut. Those purple peas sound fantastic. Let us know if they're purple or green.

  11. Brenda, the closest thing to a marie biscuit in the States is graham crackers. BTW, marie is pronounced MA-ree, not ma-REE, in British/Australian/South African etc countries.

    Narelle, care packages are sure winners to family far from home. I remember sending my 16 yr old son care packages when he was on a 4-mo school exchange in Wales and he was SO appreciative of everything....even the Quattro razor blades that he couldn't find over there LOL.

  13. The care package will be with him shortly....I wish I had held back some of that yummy slice now...but he is truly welcome to all of it. Apricot is his favourite fruit.
    I think the care package is a fantastic idea as well.
