Hi there!

I’m slowly working towards some simplicity within the home, but hey! It’s a lot of hard work!

I love having a go at growing my own veges and always use herbs fresh from my garden. I try to plant from seed whenever I can and have learnt to save and share my own seed for the following year. I make Award Winning preserves and pickles; and my husband brews Award Winning boutique beers as well. I love to stockpile and try to limit quick trips to the shops. I dabble in bread making and enjoy making my own stocks too.

I enjoy feeding my family good hearty meals, nothing like those tiny restaurant stacks you have to look for on the plate. My husband maintains our vehicles and machinery and we both enjoy fabricating on a small scale mostly relying on metal & timber recyclers for any materials needed.


While I don’t always have time to reply to comments, I love reading them. I hope you enjoy your stay and I hope you learn something new because I love sharing what I learn, and I'm always looking for another new skill myself.

Green Tomato Pickles & Green Tea

I wake, it's still dark outside. I lay wondering what havoc the crazy wind we had last night has left for me to clean up this morning. I can't help but think about my garden, but still I nuzzle into the thick pillow and quickly drift back to sleep. It's there to take the space of hubby when he is away at work....I can't sleep in an empty bed and this helps.When I wake again, my attention is drawn to the food prep I have in the kitchen. I've almost used up the 10kg bag of onions I bought at the markets on Saturday, and I need to track down more jars.

When I need good tomatoes or cucumbers I go to the one 'shop' I know best. Each Saturday our local markets are held at Warrawong on the lake; and if you don't catch your regulars there, you can drop in on Sunday at the Dapto markets. I visited both this weekend past to get the finest organic produce I know to make some preserves for Christmas gifts this year. When you first park your car on the lawn in Warrawong, as you enter the rows of stalls, they are right there on the right hand side. You can't miss this stall. They confidently advertise that they are 100% organic and the sweetest in Australia.


I've been going there for years now, and have just began sharing my preserves with Mama. She's the boss on the stall, Mama sits at the scales and the cash-tin and everyone pays her; but her hubby and two boys work the stall and help out the hoards of customers. They sell out every week, so I know their produce is very fresh, and they are only up the road in Picton as well. Brilliant! Yesterday I took them a jar of my Plum Sauce and a small basket of Mini Black Russian tomatoes from my garden, and much to my amazement Mama was blown away by my generosity. She kept popping more cucumbers in my bag while we talked, even though I had already paid. I can't wait to find out what she thinks of my Tomato Relish and Choko Pickles.
Last weekend I ordered another box of Green Tomatoes off Mama, which I picked up on Saturday.


They have introduced a new cucumber variety (I'll tell you about it tomorrow) to their stall and I've decided to try them out on my Bread and Butter Pickled Cucumber recipe, but that will be tomorrow's post, as I only salted them last night.
Not all the produce here is from the markets,
but I had already made some purchases elsewhere.
 
I'm a bit late in the making of these gifts, and the preserves stockpile is a bit bare like Old Mother Hubbard's  cupboard, and nothing like my stockpile here.....but I still have some time left in the kitchen before heading off to Cousin M's in Bundanoon for the big day. I like to share my preserves with family and always take a box of goodies with us.

I've blogged about Green Tomato Pickles before but I was lazy and used the whizzer to chop them up...It made the final product far to runny for my liking. I chopped them all by hand this time; producing a much better consistency.....

Green Tomato Pickles
5 1/2 kg green tomatoes
2 to 2 1/2 kg of onions
140 grams salt
1 1/2 to 2 kg sugar
1 bottle of Ezy Sauce (Shake well before opening)
1 level tablespoon of mustard powder
1 level tablespoon of curry powder
1 level tablespoon of cornflour
2 level teaspoons of turmeric powder

Slice or chop into a large dish the green tomatoes and onions. Mix in the salt, then cover and leave to stand for 12 to 24 hours.


After that time,add mustard, curry, cornflour and turmeric to a small mixing bowl and add a little water to make a runny paste. (I used Apple Cider Vinegar). Set this aside for later. 

Empty the onion and tomato mix into a large boiler and bring to the boil before adding the sugar and Well shaken bottle of Ezy Sauce. Boil until thick (at least an hour). 

Add the runny spice mix and cook for a further half hour stirring all the time. Check for setting on a cold plate placed in the fridge. 
Once set remove from heat and bottle in clean sterilized glass jars.

TIPS:
  • I can't stress enough on how organized you need to be at this bottling time. It's important that you have enough bottles ready.
  • When decanting into glass jars, I use a jug with a handle like this....If I need to put down the jug, I just hang it over the inside of the boiler like so. The only time I put the messy jug on the bench is when I scrape down the sides of the boiler for the last 1 or 2 jars.

  • After scooping up a jug of hot pickles, scrape the outside of the jug onto the inside of the boiler. This helps to prevent any drips on the jars, and makes for a lot quicker cleanup.

Ensure lids and jar rims are clean by wiping with a lint-free cloth as hot as you can bare; then place lids on while hot. Any that don't have the lids pop down with a good seal can be placed in a moderate oven for 20 minutes, then removed to cool. This should seal the rest of the jars. If not,  use those jars first by storing in the fridge.

Green TeaCamellia sinensis

Did you know that Green Tea can be grown in your own garden? I never knew that a Camellia variety (Camellia Sinensis) was in fact Green Tea that tea-drinkers enjoy. There are many health benefits to be had by drinking Green Tea.
My mate Richard gave me a few small branches, actually I pinched them out of the back of his ute....lol It's easy to propagate too, but I dried this lot, as we have done them in class.

While my taste-buds are still learning that tea is a good thing, I might try adding my home-grown Stevia powder to it to have a ready sweetened tea to just add boiling water to.

Aunty Shirl's Tomato Relish

My hubby loves his Aunty Shirl's Tomato Relish! I have lots of different pickles that I make...but this one would have to be his favourite.

The photos show a triple batch!....If you multiply the recipe, the vinegar doesn't quite get the same multiplication....I used 2 Litres for this triple batch.

Aunty Shirl's Tomato Relish

3lb Tomatoes (1.5kg)
1lb Brown Onions (450g)
1lb Sugar
1 tablespoon Mustard Powder
2 tablespoons Plain Flour
750 mls Brown Vinegar (Malt Vinegar is lovely too) set aside about 1/4 cup vinegar to mix dry ingredients
Salt & Pepper (not neccessary, I never add this)
Salt to cure (sprinkle over the top, then stir through)


1. Peel the tomatoes by scoring a cross in the top of them, then dropping them in boiling water for roughly 30 seconds. Peel them in batches....but allow to cool slightly as they will  be very hot to handle.


2. Roughly chop the tomatoes and place in a large plastic or ceramic bowl.

3. Peel and roughly chop the onions and add to the tomatoes. Mix thoroughly.




4. Sprinkle the mix with salt...and stir through. Cover and allow to cure overnight.








5. Once cured, drain the tomato and onion (do not rinse), then put in large pot and cover with vinegar.



6. Add the sugar, and gently boil for 1 hour.
Stirring almost constantly.

7. Mix dry ingredients to the left over vinegar then add to the pot.

8. Stir constantly now for 1 hour. Check for a good setting.



9. Sterilise your clean jars by placing them in a hot oven for 20 minutes.









10. Bottle while hot. Ensure that the rim and seal of each jar is very clean using a very hot wet dishcloth. Place lids on immediately.

11. Allow to cool before labelling. Use Title and date.

GREEN TOMATO PICKLES

Hello, if this is the first time you are visiting my blog, then I welcome you with open arms. I have been very busy in the kitchen these last couple of days...Today I have finished the Green Tomato Pickles, and you can click here for the recipe on my blog.

I chopped up all the green tomatoes in the whizzer...


This shows after everything is added to the bucket....the tomatoes, onions and cauliflower...
and now added the salt, and covering with water.

After 24 hours of salting.

Using a large strainer, strain the mix in the sink. I stand a bowl upside down,
and place the strainer on that.
You can see that this is an extra large strainer...which I found at a cheap shop.

Here the vinegar has been added, and from here it needs to cook for 2 1/2 hours.

Before adding the rest of the engredients, I always mix it in a separate bowl, then push through a strainer. This way you don't have any unwanted lumps of flour in your pickles...these can turn to lumps of glue like yuk, which you don't want. So always push the mix through a strainer first.

Add a small amount to the pickles at a time, stirring thoroughly each time until all the mix is used.


Now stir the mix thoroughly for 15 minutes.


Again, set your sterilised jars on the bench and display them accordingly with their lids.

After filling the jars, using a hot wet cloth, as hot as you can handle it...wipe the rim of the jars and also the outside of the jars. Place lids on while hot.

What's for tea at your house tonight?
We are having Turkey leg meat...roasted...I made a trivet of onion, herbs, garlic, the carrot peelings from todays salsa, some other greens in the garden, and even a lettuce that bolted. It really increases the flavour when you have a lovely trivet for your meat to sit on while roasting.

I will get two meals from this, and serve 5 adults at each meal.

Green Tomato Pickles

With the huge stockpile that I have, I have been trying to avoid the shops, not going on the weekend like normal.....I think most of the time we go shopping out of habbit....not because we have to, just because we have gotten into this mundane routine, that really isn't necessary, especially once you start building your stockpile.  That is one of the reasons I am building my stockpile, to limit trips to the shops, to have things on hand to make whatever you want , when ever you want...

I wholeheartedly support stockpiling, its like having a mini shop in your own home, with everything personalised to your own needs....what more could you want?

Well, today I finally had to do some shopping; as you know I got all those green tomatoes on Saturday.....well it's pickling time here now....I got a good bargain with onions today...10kg for $9.99 . That's not bad, but now there are plenty of onions in this house, as I got 10kg of spanish onions about 3 weeks ago for the same price....One week after getting the spanish onions I found them in another shop for $26.99 for the same 10kg bag, so I definately got a bargain there......so on my list to do, first up is finish the mushroom ketchup I am making.....when I am finished, there will be a tutorial.....I may just be on the pc a bit more tomorrow, resting in between chopping onions, green tomatoes, oh and more onions.....I have a lovely recipe for pickled onions, last season I came up with an idea of slicing the onions first, that way they can be used on a sandwich as well.....Around here they are so popular...I usually don't get to keep them in my stockpile for long.

As I was saying....my list for tomorrow, or the next few days is:

  • finish the Mushroom Ketchup (check in over the next few days for the recipe and tutorial)
  • make Green Tomato Pickles (chop and salt overnight)
  • make Pickled Onions ( chop and salt overnight or at least 4 hours)


GREEN TOMATO PICKLES.

4 pound green tomatoes      
1 pound onions
1 pound young beans          
1 small cauliflower.

Cut up and cover with water and 1 cup of salt.  Leave overnight then strain off water.
Add 1 ½ pints of vinegar to veges, bring to boil and cook for 2 hours and 15 minutes. Stirring occasionally
Mix together in a bowl the following:
1 cup plain flour
1 level tspn ground ginger
1 level tspn mustard powder
1 desertspoon curry powder
1 tablspoon tumeric
1 pound sugar.
Now mix the dry ingredients with vinegar and add to tomatoes.
Boil 10 to 15 minutes, stirring constantly
Bottle in sterilised jars and cover while hot.

I will be cutting up the tomatoes, onions, beans and cauliflower tomorrow...so check back in a few days time to see how I went after chopping up all those onions. By then the Mushroom Ketchup will be finished too.

2 markets today

Today after dropping my DS16 off at Tafe, we planned a trip to Kiama, to the local Farmer's Market....we had never been down there, so we though we would go for a drive and check it out....There were lots of fresh fruit and vegetables to be bought....and of a high quality too.
 
DH kept looking out to sea, checking out the ocean....In the distance you could see a light craft bobbing up and down. This tells me it's starting to get a bit rough out there...We are getting itchy feet and need to get back on the water soon. I love going fishing.....
 
As we had many jobs to complete today, we decided to go back home to get stuck in, so if the weather is nice, we may go fishing tomorrow. On the way back home, noticing it was still early, we decided to go to Warrawong markets as well. Lucky we did, because on the way out, I found this huge batch of green tomatoes....That was all the stallholder had left. I asked, "How much?" and he replied "Ten dollars a box.", I said back to him, "How about $15 for the two?" and that's how I got them home...I am yet to weigh them, but they are pretty heavy... I haven't done Green Tomato Pickles for a few years now, so it will be good to have them in the stockpile. Look for the post in a couple of days..

I won't get time to cook these up over the weekend, but I will do them during the week some time.

 

 
Things that need to get done this weekend.......
 
  • Repair the front gate.
  • Make 2 batches of home brew
  • Pack away dehydrated mushrooms
  • Cut up animal fat and start rendering
  • Check that I have all engredients to make soap from animal fat
  • Make soap
  • Make Laundry Powder
  • Make mushroom soup and freeze in batches 
  • Batch of Pumpkin scones
  • Batch of Pumpkin Wholemeal muffins
  • Make 2 loaves of bread.

 I also found this cane basket, that needed rescueing.....It is in a state of repair, but I like the idea of it having been around the block a few times.....it has a history, and now it is going to have a history with me as well.
